~ Eve's Own MCT Mayonnaise Recipe - (You'll need a 'stick' Blender (Also called an Immersion Blender), with a really tall & slender Mixing Cup or Jar... just wide enough to allow the blending head of the Stick Blender to fit precisely)

VERY IMPORTANT TIP!:  I allow my Eggs to warm to Room Temperature before blending. If you skip this step, your Mayo will not thicken and no matter what,  you can't 'fix' it... so please, have patience & allow the Eggs to completely warm to Room temp.

​

You'll need: 

​

* 2 whole (Room Temperature) Organic-Cage-Free Eggs

* 2 TBSP Raw/Unfiltered Apple-Cider Vinegar (Like "Bragg's Brand)

* 1 TBSP Lemon Juice

* 1 tsp Himilayan Pink Salt - (or to taste)

* 1 Packet of 100% Organic Stevia Sweetener

* 1 & 1/2 cups of MCT (Coconut) Oil 

​

** Add all of the above Ingredients (in order listed) to Stick/Immersion Blender Container... Blend at HIGH Speed until Mayo is thick and creates 'Pillows'.... 

​

​

** The Calories are going to be 'approximately' whatever the nutrition Panel on your MCT Oil indicates (per tsp)... plus the Eggs.

​

* My MCT Mayo is 31.60 Cals per tsp. or 63.20 cals per TBSP.

​
